摘要 不同产地黄豆的品质不同,但相关结构差异性研究未见报道。采用中红外(MIR)光谱分别开展了黄豆的结构研究,实验发现,黄豆的红外吸收模式主要包括ν■、ν■、ν■、ν■、νamide-Ⅱ-黄豆、νC=O-黄豆 和 νC-O-黄豆。黄豆的二阶导数 MIR 光谱的谱图分辨能力优于相应的一维 MIR 光谱、四阶导数 MIR 光谱和去卷积 MIR 光谱。研究发现,MIR 光谱可以快速开展黄豆结构差异性研究。本项研究拓展了 MIR 光谱技术在黄豆结构差异性的研究范围。
Abstract:The quality of soybean from different producing areas is different, but there is no report on the related structure difference. The structure of soybean were studied by middle infrared (abbreviation: MIR) spectroscopy. There were ν■, ν■, ν■, νamide-Ⅰ-soybean, νamide-Ⅱ-soybean, νC=O-soybean and νC-O-soybean. The resolution of the second derivative MIR spectroscopy of soybean is better than the corresponding one-dimensional MIR spectroscopy, the fourth derivative MIR spectroscopy and the deconvolution MIR spectroscopy . MIR spectroscopy could be used to distinguish soybean structure differences. The paper demonstrated the key roles of MIR spectroscopy in study of structure differences of soybean.
