Abstract A method of detecting the content of vitamin C in the kiwifruit by HPLC was established. A HYPERSI L - C18 column was used,the flow phase was 0.1% oxalicacid, the flow rate was 1.0 mL/min and the detection wavelength was 254 nm in the HPLC system. The standard working curve of vitamin C had a good linear relation in the concentration range of 10~500μg/mL, the linear equation was y =125.51x +225.54 and the related coefficient was 0.998 7,the recoveries were 79.2%~98.7%. This method was simple,fast and suitable to detect the content of vitamin C in kiwifruit.
