Abstract By using the method of water solvent,orthogonal process conditions of extracting nutrients from old leaves of toona sinensis roem were studied. The research resluts show that: under the optimum technological conditions, extracting time is 3 h, solid-liquid ratio is 1∶20 ( g / mL ), the extraction temperature is 100 ℃, the nutrient was extracted from 25.0 g old leaves of toona sinensis roem powder, the crude product yield can reach 27.4%, the crude product structure was characteried by one-dimensional infrared spectroscopy and second-derivative infrared spectroscopy and the main chemical composition is polysaccharides.
