China is a country of alcohol production, consumer. Alcohol production takes an important position in the country's economy. The traditional production of alcohol by temperature limit, when the temperature> 36 ℃, the bacteria will be inhibited, therefore, high temperature resistant bacteria research is particularly important. The traditional alcohol production technology and high temperature resistant alcohol fermentation technology were described. It was pointed out that compared with the traditional alcohol fermentation technology, the high-temperature resistant alcoholic fermentation technology had some advantages, such as short fermentation time, high yield etc. ,thereby promoting the development of China's alcohol industry.
