Abstract The diallyl sulfide is the active ingredient of allicin. The extraction methods and synthesis methods of allicin, namely, biological extraction and chemical synthesis were summarized; the steam distillation, solvent extraction, supercritical CO2 extraction and other methods in biological extraction methods were introduced. It was pointed out that biological extraction method to extract allicin has a characteristic of high price and low conversion rate, while the producing rate of allicin synthesized by chemical synthesis is 87% ~ 93%, the purity of the active ingredients of garlic powder is high , and the efficacy is significant and the price is low, so chemical synthesis method to synthesize garlic is recommended.
